Biscuits

No pictures for this one, but just a quick post about making biscuits! If you're new to baking or don't have much time these little treats can be whipped up very quickly and easily. I made some this afternoon to take to work for a coffee break nibble.

The recipe I use is as follows:

125g Stork
50g light muscovado sugar
50g caster sugar
1 egg, beaten
150g plain flour
1/2 teaspoon baking powder
1 pinch salt
100g good quality dark chocolate, chopped finely

Beat Stork until creamy. Add both sugars and beat until fluffly. Add egg gradually and beat in well. Fold in flour, baking powder and salt. Stir in chocolate and ensure it is evenly distributed. I bake mine for about 15 minutes at 180 in a fan oven, but they're ready when they go a lovely golden brown. They should be crisp on the outside and chewy in the middle.
