Easy-peasy Cake Pots

Hello all!

Bob here, with literally the laziest thing I've ever baked.

It turns out that a simple sponge mix made with 1 egg fills 2 ramekins. Sorry for the old-school measurements in ounces, but this is how I remember it. If you want it in new money, 2oz is about 60g.

2oz self raising flour
2oz sugar (I used golden castor this time)
2oz butter (softened in the microwave for 10 seconds)
1 egg

Additionally, 1/2 tsp baking powder, 1/4 teaspoon vanilla extract and a splash or orange juice... But the cake mix would work without those.

Beat it all together with a wooden spoon until it's smooth, dish up into the greased ramekins, and bake at 170 degrees until they're brown on top, springy to the touch, and don't sound like they're fizzing when you put your ear to them. I think it takes about 20-30 minutes?? Wasn't really counting.

Each pot is a nice sharing size for 2 people, and if you're watching your figure like I am, half a pot is 6 weight watchers points.

Should have some slightly more exciting stuff to blog this weekend. Birdy's also got some fun stuff waiting to be blogged, so that's definitely worth keeping an eye out for.
