'Ultimate' Burger Buns

This is nearly as old as the soda bread bake. I do get behind with these things! Nomes would probably call them teacakes. I call them buns. Teacakes have fruit in them. :p

We went through the weightwatchers recipe book we have on the bookcase, pulled out a recipe for mexican bean burgers, and thought 'we could make our own burger buns!'

So we did. And it was really simple! It's just a basic white bread dough, but with the addition of 25g of a solid fat (we used butter instead of lard because Nomes is a veg-muncher), a tablespoon of sugar, and you replace two thirds (2/3) of the water with milk for extra sweetness and a softer crust - I think that's what it does anyway!

The recipe is available from the channel 4 website:

After the dough's first rise, I shaped it into 12 bun-shaped balls, popped them onto two greaseproof-papered baking trays and washed them in egg. Half way through the second rise, we sprinkled them in sesame seeds. They were then baked for about 10 minutes, and the result is what you see below!

I was amazed at how soft they turned out. The bean burgers themselves were an utter disaster (they just fell apart!), but the buns were great! We had home-made oven-baked chips to eat too, so it wasn't a complete failure. Chip butties!! :)

I definitely recommend giving these a go. I'm not sure we actually had a barbecue season in England this year (was there a week in August where the sun came out?), but you can keep this up your sleeve for next year! Just think about firing up a bbq next summer and cracking out your home-made baps for everyone to have a good nosh on.
